Long time, no blog!

Wow! I haven't written in awhile! Not sure why, but I'm back! This will be a quick one but I'll be uploading a bunch of pictures with recipes in the next few days!

Some updates: Total weight loss: 17.6 pounds! Not bad for 7 weeks. I feel so great too. My clothes are getting very loose but I'm holding back on buying new things until I loose all that I want. I have tons of clothes in my attic from a few years ago that I'll fit into, they may not be my most stylish outfits, but it'll have to do :)

Yes I'll have dessert!

It's always so tough to find a dessert that is "okay" to eat. I normally just skip it anyway because I feel like if I have it I'm cheating. But really sometimes you just want dessert and you should have it. If you eliminate everything you used to love, a diet WILL NOT work. So I created this pie recipe that is super easy to make and you know what? Now I have dessert*! This pie is just delicious! And I don't feel that bad eating it.

Ingredients(makes 8 servings)
-1 jar apple pie filling
-1 whole wheat frozen pie crust(Whole Foods 365 brand)
-1/4 cup quick cooking oats
-1/2 cup whole wheat flour

-1/4 cup brown sugar(unpacked)

-2 TBS Earth Balance butter(organic)

 
 
Directions
1. Thaw frozen pie crust for 15 minutes.
2. Preheat over 375(place cookie sheet on lower rack)
3. Put pie filling into thawed pie crust
 
 4. In a medium bowl, mix together the brown sugar,oats and flour. Mix in butter with a fork just until the topping is crumbly. Spoon topping onto your pie just before baking.
 
 5. Place on top of cookie sheet in oven and Bake for approx. 1 hour(until filling starts to bubble)


 6. Let sit for 30 minutes before serving
6 PP per serving, makes 8 servings
I also added 4 TBS whipped cream for an additional 1 point :)


Notes
 -Sometimes I add 1 TBS of water if the crumble mix looks too dry
-I use 5 Acre Farms Pie Filling & Topping from Whole Foods, there
are less calories, fat, carbs, and sugar, plus it's all natural

Week 3 and my life!

 Week 3: I lost 2.4 lbs and am now down 8.8 lbs! Go me!!

I have some great people in my life who are wonderful at encouraging me. First, my husband Adam, he is always telling me that I'm beautiful even when I feel my worst. I used to wish that he would just tell me I look gross and need to lose weight, then I realized he REALLY does love me just the way I am. I love that he will eat whatever I'm making so that makes it a lot easier than if I had to make him a meal that I can't have. I just love him <3

The other person is my friend and business partner Kerry. She's the reason I signed up for WW. We were in our office when she said she was starting so she could lose the last 10 lbs needed to fit into her favorite jeans again, so I decided I should join too. It's been great to go to meetings together and share our losses and tips for losing the weight. She also joined my gym so we could work out together sometimes, having a workout buddy is always a good thing! I'm very thankful for her.

I'm hoping to break 10 lbs this week. 10 lbs is one size right?! I already am starting to feel and notice a difference. Another thing that is keeping me going? The summer. I want to be able to play on the beach with my kids without feeling like everyone is staring at me. I want to be comfortable wearing a bathing suit and not always fidgeting and making sure I'm covered. Summer will be here in less than 5 months so I'm going to keep working as hard as I can!

 I'm going to start writing about my family, friends, life, and everyday "things" along with my weight loss. I think this will be a great way to keep track of my busy life and will love to be able to go back months and even years and look at what I've done!


 My girls are amazing, and fun, and full of love. I love this sweet moment between them!

Sundried Tomato Chicken recipe

Here's the recipe with only 8 PP per serving and 3! of your daily veggies that I said I'd post a few days ago:

Ingredients(makes 1 serving)
-4 oz. Trader Joe's sun dried tomato chicken breast(they're small like tenders)(4 PP)
-1 spray cooking spray(0 PP)
-1 tsp olive oil(1 PP)
-1/2 C brown rice(3 PP, PF)
-1 cup frozen broccoli(0 PP, PF)
-1 C fresh button mushrooms, cut in quaters(0 PP, PF)
-1 C fresh baby spinach(0 PP, PF)

Directions
1. Cook brown rice using instructions given on box/bag. I don't use "quick" cooking rice, mine takes about 25 minutes to cook so I do this first then prep my other items and start cooking those when there is 15 minute left on the rice. I also don't use any butter or oil in my rice.
2.Heat up pan using med-high heat(I use a grill pan) and spray with 1 spray cooking spray
3. Put chicken in pan and cook on each side about 5 minutes
4. In a pot with a steaming basket I cook my frozen broccoli for about 10 minutes on medium
5.While chicken is cooking I add 1 tsp of olive oil to a smaller pan and add my mushrooms
6.Cook mushrooms for 3 minutes then add spinach and cook until spinach is just wilted(about 4 minutes)
7. All your ingredients, veggies, rice, and chicken should be done with a few minutes of each other.
8. Enjoy!

Week 2!

I don't know why but I was nervous for weigh in this week. I think anytime that you have to get on a scale(especially in front of someone else) is nerve wracking, for most people anyway! I've been doing extremely well on my eating and exercise so I shouldn't have been nervous. And I lost! 3.8 lbs. Woohoo! SO excited to be down over 6 lbs in 2 weeks. I already feel better. On to Week 3 I go!

Today for the 1st time at the gym I tried Zumba. I've done it once or twice using OnDemand(comcast cable) and it was okay. But actually going to a class and having the music going and dancing along with everyone makes it the best exercise I've done in the longest time! I like it so much that I'm going again tomorrow! Can't wait.

My kids went to bed pretty early tonight and haven't woke up, for the mommies out there you understand how wonderful this is! It's always bed, up for water, back to bed, they need another blanket, back to bed, they're too hot now and it can go all night! So I'm going to cherish the fact that they are sleeping and enjoy some quiet time alone before my husband gets home from work. So goodnight!

Let's get physical!

I am on Week 2 of my fitness routine and I'm loving it! I love the classes I take at my gym, chisel(just as it sounds, it's a great all over workout), fusion(combo of pilates and yoga),  my least favorite though? Step. It's just kind of blah to me and I feel ridiculous doing it. I've only done it once and don't really want to do it again but I will...just one more time.

I'm also a fan of the exercise ball. I've been using it at the gym but decided to buy my own. My kids love it too. They think it's funny to watch Momma on a big ball in the living room! I've be using it to help strengthen my abs, which have been almost non existent for 2 years! Plus it's just tons of fun to sit on while watching my shows at night.

Week 2 is almost over and I'm hoping I lost a few more lbs! Wish me luck!

The First Weigh In (written 1/12/11)

My WW meetings will normally be Wednesday mornings but we were expecting(and got) a huge snowstorm so I went last night for my first weigh in! I think everyone had the same idea because it was packed. I actually had to sit and wait before I could weigh in. About 15 minutes into the meeting it was my turn to go. And...

I lost! Yes! 2.6lbs! I'm not surprised I lost weight I worked very hard and followed my plan. It's really not a hard thing to do. I'm having a hard time even meeting my Points Plus allowed. It's amazing how eating lots more veggies really does fill you up! On to Week 2 I go!

I wanted to share a recipe I created that is only 8 Points Plus per serving, has 2 of your daily servings of veggies. And it is delicious!

One serving. It sure was a lot of food and filled me up!

Ingredients
-8 oz. bay scallops(6 PP, PF*)
-1/4 C brown rice(1 PP, PF)
-1 tsp olive oil(1 PP)
-1 tsp brown sugar(0 PP)
-1 tsp McCormick Kickin' Chicken seasoning(0 PP)
-1/2 tsp creole seasoning(0 PP)
-1 C frozen broccoli(0 PP, PF)
-1 C fresh red peppers, cut into strips(0 PP, PF)

Directions
1.Put uncooked rice into microwave safe container, add 1 C water, microwave for 8 minutes
2.While rice cooks, rinse off scallops and put in small bowl, add olive oil, brown sugar, Kickin' Chicken seasoning and creole seasoning. Mix until scallops are coated
3.Heat frying pan over med. high heat for a few minutes then add scallop mixture
4.Cook scallops for 4 minutes on 1 side then flip over. Add frozen broccoli and cover pan
5.When the timer goes off for the rice, take rice and add to scallops and broccoli, then add peppers
6.Stir all ingredients together, add 1/4 C water(this will create a little bit of sauce) cover again and cook for another 3 minutes. 
7. ENJOY!
